4 plum tomatoes
2 red onions
6 mini cucumbers
1 lb fresh mozerella
1 bunch basil cut with herb scissors
1/3 cup balsamic vinegar
1/3 cup balsamic glaze
1/4 cup olive oil
Salt and pepper to taste
1/8 cup extra balsamic glaze (optional)
Dice first three ingredients. Mix in basil. Add the liquid ingredients. Toss with salt and pepper.
Scoop onto garlic toast, or fill filo-cups with bruschetta. Drizzle with some extra balsamic glaze to garnish (optional).
